Description
A simple oven baked chicken drumstick recipe with a three ingredient marinade.
Instructions
In a food processor combine the cashews, hoisin and vinegar and blitz until smooth.
Place chicken drumsticks in a ceramic or glass dish and pour over marinade, stir to coat each piece. Marinate over night or up to an hour before cooking.
Pre heat oven to 200°C.
Place drumsticks in a single layer on a baking tray and bake for 30 minutes, turning over halfway through. Increase oven to 220°C and bake a further 15 minutes until skin gets a bit crispy and they are cooked through.
Notes
Serve with your choice of sides such as steamed rice and cucumbers.
