STEP 1
Combine ingredients, then place even balls onto tray and flatten slightly.
STEP 2
Bake and once cooled, fill with chocolate centre.
Hazelnut Cookies with a Gooey Chocolate Centre
These are the best gluten-free chocolate cookies! and they are kind of healthy gluten free cookies, made with maple syrup and olive oil, rather than refined sugar. Rather than being gluten free cookies with almond flour, I have used hazelnut meal or hazelnut flour. You could easily replace the hazelnut flour with almond meal if thats what you have on hand.
You don’t want the filling to be too warm and melt off the cookies but also don’t let the filling set too much before making the little sandwiches as it does go hard enough you won’t be able to push down the top cookie.
These will store well in airtight container in the pantry or in the fridge for up to 3 days.

Hazelnut Cookies with a Gooey Chocolate Centre, made with crunchy cookies and a gooey centre of white chocolate, maple syrup and nut butter. A delicious gluten free snack everyone will love!
Ingredients
COOKIES
- 1 cup / 160g buckwheat flour
- ¾ cup / 75g hazelnut meal
- ½ cup / 125ml maple syrup
- 1 cup / 80ml olive oil
- pinch of sea salt
CENTRE
- 150g white chocolate, melted
- 2 tablespoons almond butter (or nut butter of choice)
- ¼ cup / 60ml maple syrup
- pinch of sea salt
Instructions
COOKIES
Pre heat oven to 180°C.
Place the cookie ingredients in a bowl and mix to combine. Roll teaspoons of mixture into balls and flatten slightly. Place onto a tray lined with baking paper and bake for 15 minutes or until golden and crisp. Allow to cool on tray.
CENTRE
Place the melted white chocolate in a bowl with the nut butter and maple syrup and mix to combine.
Once the cookies have cooled, place a spoonful of chocolate onto one biscuit and top with another biscuit to make a sandwich.
Notes
You can make your own hazelnut meal by placing 75g of hazelnuts into a Thermomix or food processor and blitzing until fine.
If your chocolate mixture is a bit warm you may need to cool it a little in the fridge so it doesn’t run off the cookies. I placed a spoonful onto a cookie then quickly put in fridge to set before adding top biscuit.
Store in an airtight container for up to 1 week.
