Greek Chicken marinade used to make an easy family dinner of chicken skewers and Greek salad. Healthy, delicious and really easy to meal prep. I served alongside with some fresh, crusty sourdough bread.

Greek Chicken Marinade

Description

Greek Chicken marinade made with yoghurt, lemon, garlic, oregano, thyme and olive oil.


Ingredients

Scale
  • 4 chicken breast, cut into bite sized pieces

MARINADE

  • 2 tablespoons olive oil
  • 50g plain yoghurt (I used natural yoghurt)
  • lemon, juiced
  • 1 garlic clove, crushed
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • salt & pepper

SALAD

  • 1 cucumber, sliced
  • 1 punnet cherry tomatoes, cut in half
  • 1 red onion or red shallot, thinly sliced
  • splash of olive oil
  • squeeze of lemon juice
  • salt & pepper

Instructions

Place marinade ingredients into a bowl and mix well to combine.  Pour over chicken and toss to coat.  Cover and marinate for 30 minutes or portion and freeze for later use.

Soak wooden chicken skewers in water to ensure they wont burn while cooking.

Once the chicken has marinated, spike 4 pieces of chicken onto each skewer and cook on a bbq or really hot pan until golden and cooked through.

Toss together all the salad ingredients and serve alongside the chicken skewers.

Notes

Serving chicken on the skewers is optional, you can easily just cook as it is.
