Easy Pizza Dough made with Yoghurt
Pizza’s are one of my go-to lazy dinners but still able to sneak in some nutrition. Especially easy if you have a constant supply of spare hidden veggie tomato pizza sauce. As far as pizza bases go, these would have to be on the healthy side, I mean it’s just flour and yoghurt cooked in a dry pan.
My son who has always been a terrible eater, although very much starting to improve, I mean he never even used to eat pizza or cheese of any type! We have now discovered he likes strong tasting cheddars and so I make his pizza using Mainland Organic Cheddar instead of the milder flavoured mozzarella. He now loves pizza and will eat pretty much a whole one of these to himself, which I love, it means I know he is going to bed with a full tummy, rather than the crumbs he used to sometimes barely eat for dinner. These are great if you make up a batch all at once, then they are ready to go in the freezer for those late arvos or after kids sports.
These use my Yoghurt Flatbread recipe, I have just folded over the edges to give the pizzas a bit of a crust. I think next batch I will try stuffing these with cheese and see if I can recreate Dominoes stuffed pizza crust! Will post if it works.

Description
Easy Pizza Dough made with just flour and yoghurt. Perfect for all your favourite toppings like Hawaiian, Meat Lovers or a super simple Margherita.
Ingredients
1 cup natural or Greek yoghurt
1 cup self raising flour, wholemeal is good
extra flour for dusting
HAWAIIAN PIZZA
2 pizza bases
1/2 cup pizza sauce or my hidden veg Tomato Pasta Sauce
11/2 cups grated mozzarella cheese
1/2 cup ham, diced
1/2 cup pineapple pieces
Instructions
In a bowl combine the yoghurt and flour until mostly mixed together.
Dust the bench lightly with the extra flour and tip mixture out onto bench.
Knead for about 5 minutes or until the dough comes together. It will start out quite crumbly with bits all over the bench, but as you knead it, pick those extra bits up and after about 5 minutes it will come together to form a smooth dough. Keep dusting with flour if you find you dough still wet.
Break off small balls and roll out flat with a flour dusted rolling pin. Once you have formed a circle, fold in the edges to form a crust for your pizza.
Place a dry fry pan (no oil) over med-high heat and shake off any excess flour, then place a bread into the fry pan, crust side up. After about a minute it will start to bubble up just slightly, flip over and cook for about the same time on the other side.
Use a dry tea towel or cloth, to wipe out any flour from the fry pan between breads as this will start to burn.
Your pizza bases are now ready to top, or you can freeze for later use.
HAWAIIAN PIZZA
Pre heat oven to 220°C.
Place pizza bases onto a baking tray. Top each with tomato sauce, then half the cheese, ham, pineapple and remaining cheese.
Bake for 15 minutes until cheese has melted and started to bubble. Slice and serve.
Notes
You could make up all of these pizza bases and freeze for ready made meals. Just add toppings but don’t cook in oven and lay a piece of baking paper between each pizza.
