DAISY COOKIES

These Daisy Cookies will allow you to show off your artistic flair and with just a few simple ingredients you can make these in no time.

For the centre of these cookies I have used smarties as I thought this was a cleaver and simple way to add some colour into the flowers.

My kids love making these cookies with me and they get excited to share them with their friends.

Below are some of my other cookie recipes;

  • CRUNCHY COCONUT COOKIES
  • TAHINI & HONEY COOKIES

INGREDIENTS

  • PLAIN FLOUR – Any plain flour will work.
  • BUTTER – Room temperature makes it easier to combine in to a dough. I usually use organic butter as I once read if you can’t afford to eat all organic, the main items to focus on are organic fats as we absorb these quicker and easier in the body. Of course you do not have to use organic butter but this is just my preference.
  • ICING SUGAR – you can use caster sugar as an alternative but I like to use icing sugar in this particular recipe as the texture resembles more of a shortbread cookie.
  • SMARTIES – M&M’s or similar shaped coated chocolates could work.

FREQUENTLY ASKED QUESTIONS FOR DAISY COOKIES

How long will these Daisy Cookies last for?

These Daisy Cookies will last for about a week if stored in an air tight container at room temperature and up to two weeks if stored the same way in the fridge.

What can I use instead of smarties?

If for some reason you prefer not to use smarties in this recipe, you can try M&M’s, Skittles or chocolate chips (they just won’t be as colourful).

Why should you chill these cookies?

Chilling the dough will not only help the cookies to keep their shape in the oven but it also increases the flavours and dehydrates the dough giving you a more tasty cookie.

HOW TO MAKE DAISY COOKIES

STEP ONE

Preheat the oven to 190°c.
Place all ingredients in a bowl and rub the butter into the dry ingredients until it starts to form a dough.

STEP TWO

Once combined, knead just for a couple of minutes until a smooth dough forms.

STEP THREE

Roll dough in to small balls, 5 for each daisy cookie.  Place the 5 balls in a circle to form a flower shape.

STEP FOUR

Gently push down on each ball with your finger to create the petal shape.

STEP FIVE

Place a smartie in the centre and place daisy cookies in the freezer for 30 minutes. This helps keep the cookie shape while baking, is not essential if dough is cool.

STEP SIX

Place daisy cookies in oven and bake for 8-10 minutes.
Let cool before serving.

Ingredients

Scale
  • 225g plain flour
  • 150g butter
  • 75g icing sugar
  • Smarties

Instructions

Preheat the oven to 190°c

Place all ingredients in a bowl and rub the butter into the dry ingredients to form a dough.

Once combined, roll 5 small portions into balls. Line a tray with baking paper and place the 5 balls in a circle to form a flower shape.

Gently push down with your finger and create the petal shape.

Place a smartie in the centre and place daisy cookies in the freezer for 30 minutes.

Place daisy cookies in oven and bake for 8-10 minutes.

Let cool before serving.

Notes

  • if you don’t have the 30 minutes for the cookies to sit in the freezer it is okay to skip this step. The reason we put them in the freezer before is to help the cookies set in their shape.
  • the dough can be frozen if needed.
  • when creating the daisy’s another option is to push the petals down with your finger then use the handle end of teaspoon to make a mark an indent to add character.
