Dairy Free Caramel Sauce
Who doesn’t love caramel? This one is seriously addictive. I have been reminded lately how so many people have kid’s on restricted diets, for a variety of reasons. I remember when I was looking at our diet as a way to help Sam’s eczema and how hard it can be to do. So I am aiming to find some really great recipe alternatives to share with you, starting with this one.
I have been making this sauce for a while now and is a great filling for caramel tarts or a dip for fruit, perfect for those avoiding dairy and processed sugars.
Great to give away as a Christmas gift as it keeps in the fridge for up to 3 weeks and the freezer for up to 2 months.

Description
Ingredients
- 540ml coconut cream
- 3/4 cup coconut sugar
- pinch salt
Instructions
THERMOMIX METHOD
Place all ingredients into mixing bowl and cook 40 mins / 100°C / speed 3.5, use the simmering basket on top of lid instead of measuring cup.
NON THERMOMIX METHOD
Place all ingredients into a saucepan over med-high heat and gently simmer for 40 minutes stirring regularly (every 2 minutes or so). Remove from heat once caramel has thickened slightly.
Notes
I probably wouldn’t attempt this recipe without a Thermomix, unless you are very patient!
