Dairy Free Caramel Popcorn


Description

Healthy Caramel Popcorn made with just freshly popped corn, honey and coconut cream.


Ingredients

Scale
  • 1/4 cup un-popped popping corn
  • 1/3 cup honey
  • 1/2 cup coconut cream
  • 1/4 teaspoon sea salt

Instructions

Pop corn into a large bowl.  Line a 27cm x 18cm slice tray with baking paper.

Place the honey, coconut cream and salt in a small saucepan over med-high heat.  Bring to a gentle simmer for 10 minutes.

Pour caramel over popcorn and mix together quickly, then tip into slice tray and press down.  Place in fridge to set for 2-3 hours.

Notes

Best served straight from fridge as can soften at room temperature.
