Dairy Free Caramel Popcorn
I have been making a few batches of this a week at the moment, using it in Sam’s lunchbox and as a snack in the car on the way to gymnastics after school on Wednesdays. It doesn’t hold together perfectly as a bar, but still makes a nice, light snack for kids with a sweet tooth. My daughter prefers just plain popcorn as she doesn’t have as much of a sweet tooth. At least with this, Sam is having a treat but made with the goodness of honey and coconut cream, a really healthy fat, great for growing kids.
I always have on hand organic popping corn from South West Provisions and it literally takes 2 minutes to have freshly popped corn, just by using a $15 popcorn maker, something like this one.
Store in an airtight container in the fridge, I would say for up to 2 weeks, but I can’t see it lasting that long!

Description
Healthy Caramel Popcorn made with just freshly popped corn, honey and coconut cream.
Ingredients
- 1/4 cup un-popped popping corn
- 1/3 cup honey
- 1/2 cup coconut cream
- 1/4 teaspoon sea salt
Instructions
Pop corn into a large bowl. Line a 27cm x 18cm slice tray with baking paper.
Place the honey, coconut cream and salt in a small saucepan over med-high heat. Bring to a gentle simmer for 10 minutes.
Pour caramel over popcorn and mix together quickly, then tip into slice tray and press down. Place in fridge to set for 2-3 hours.
Notes
Best served straight from fridge as can soften at room temperature.
