Dairy Free Blueberry Smoothies with Hidden Greens

The kids and I had the most amazing Mixed Berries Coconut Smoothie at our local Merchant & Maker and I have been trying to replicate it ever since.  This recipe isn’t even close to the one we had, but this turned out a winner and had so much hidden goodness I thought I would share this recipe.  I have written pieces and handful for the hidden veg elements in the recipe, suggesting you start small and gradually increase as your kids get used to the flavour, although these veggies really are hidden in this one.

The Weiss Coconut Ice Cream I have used as a lot of sweetener already in it, so you don’t need to add any yourself, other than the banana and blueberries.  I used my homemade Coconut Milk, which is so easy to do, I am making regularly now, otherwise any organic coconut milk is great.  Although I do recommend buying coconut cream and diluting with water yourself as store bought coconut milk just has water added to it.

Dairy Free Blueberry Smoothies with Hidden Greens

Description

Dairy Free Blueberry Smoothies made with frozen banana, blueberries, baby spinach and coconut ice cream.


Ingredients

Scale
  • 1 cup organic frozen blueberries
  • 1 frozen banana, cut into pieces
  • 1 piece celery
  • 1 piece zucchini
  • small handful baby spinach leaves
  • 1 cup Weiss Coconut Ice Cream
  • 1 cup coconut milk

Instructions

THERMOMIX METHOD

Place all ingredients into mixing bowl and blend 1 min / speed 9.  Best to drink straight away or freeze as icy poles.

NON THERMOMIX METHOD

Place all ingredients into a high speed blender and blitz until smooth and creamy.  Best to drink straight away or freeze as icy poles.

Notes

Start small with your pieces of veg and increase as your kids get used to the flavours.

Increase coconut milk for a thinner consistency.
