Crumbed Chicken recipe. Oven Baked & Gluten Free. Crunchy Chicken Schnitzel with a gluten free crumb. Possibly the easiest way to crumb chicken!
I have kept this simple by using chicken breast and slicing after it’s cooked, you could also use chicken tenders for this recipe.
STEP 1
Flatten out chicken breast so it will cook quicker.
STEP 2
Spread over mayonnaise evenly.
STEP 3
Top with crumb and press down firmly.
STEP 4
Bake until crispy and golden and chicken is cooked through.
Crumbed Chicken – Oven Baked + Gluten Free
This crumbed chicken recipe is a really great way to make crunchy chicken schnitzels without any deep frying or even any messy coating in batter! Instead of the old way of dipping in flour, egg then breadcrumb, this cheat’s version just uses a spreading of mayo on the top of the chicken and stick the crumb to that. Bake it in the oven for a healthy crumbed chicken and the kids will love it just as much! I have also snuck in some hemp seeds into the crumb for added nutrients.
How to cook Baked Chicken Schnitzel;
- Mix together the breadcrumb – I have used a combination of gluten free breadcrumbs made from rice, crushed almonds, hemp seeds, garlic and olive oil. Such a nutrient dense crumb.
- Layer the crumb – no need for dredging and dipping into bowls, just spread over the mayonnaise then press down the breadcrumbs.
- Oven Bake – bake in the oven with no added oil until crispy and chicken is cooked through. This way chicken stays really tender.

How to make Gluten Free Crumbed Chicken;

Ingredients
CRUMB
- ½ cup rice bread crumbs
- ½ cup almonds, finely chopped
- ½ cup hemp seeds
- 1 garlic clove, finely chopped
- 1 tablespoon olive oil
- salt & pepper
TO COOK
- 2 chicken breasts
- 2 tablespoons mayonnaise
Instructions
Pre heat oven to 220C (200C fan forced).
CRUMB
In a bowl combine the crumb ingredients and mix well.
TO COOK
Place the chicken breast onto a large sheet of baking paper, cover and pound with a rolling pin to flatten out to about 2cm thick. Leave on baking paper and place onto baking tray. Spread mayonnaise over both pieces of chicken, top with crumb and press down slightly.
Bake until crust is golden and chicken cooked through, 12-15 minutes.
Notes
To check chicken is fully cooked, slice and once it is no longer pick it is cooked.
