Creamy Salmon + Avocado Pasta

This is one of those super easy and quick dinners that will be a hit with the whole family.  Easily one  where you can grab the ingredients on the way home and have dinner on the table fast.  You can use any pasta you like, I just love the super skinny, angel hair pasta in this.  I actually bought salmon with the skin on, just removed it and fried it in a pan and the kids ate the crispy skin along with this pasta.  My son actually prefers just eating the crackly skin.

Remember to save a little of the pasta cooking water to add a splash to this dish.  The starch in the cooking water makes the sauce glossy and helps to coat the strands of pasta.  You cold also halve the amount of cream in this recipe and still have a delicious dinner, I just made this one super creamy.  Top with grated parmesan if you like.

Creamy Salmon + Avocado Pasta

Description

Creamy Salmon + Avocado Pasta made with just salmon, avocado, cream, butter and lemon and can be ready in just minutes!


Ingredients

Scale
  • 50g butter
  • 2 lemons, zested and juiced
  • 400g skinless salmon fillet, sliced thinly
  • 1 cup / 240g pouring cream
  • 1 large avocado, diced
  • 500g angel hair pasta, cooked as per packet
  • 1/2 bunch fresh parsley, to garnish

Instructions

Add the butter to a fry pan over medium heat and as it starts to melt add the lemon zest and cook for 2 minutes, stirring regularly.  Keep an eye on it, you only want the butter to brown just slightly not burn.

Pour in the cream and lemon juice, increase the heat a little until sauce begins to simmer and then add the salmon.  Turn off the heat and place on lid allowing the salmon to cook in the sauce.

Once the salmon looks cooked, stir through the pasta, a splash of the pasta cooking water and avocado.

Serve sprinkled with parsley.

Notes

This is not good as leftovers, reheating will overcook the salmon too much.
