Chocolate Coated Coconut Balls made simply as a healthy snack in your kid’s lunchboxes or for when you need something sweet in the afternoon, but is still mostly healthy.

Chocolate Coated Coconut Balls

These are like chocolate Bounty Bars but in little bite sized balls.  The hardest part about this recipe is the ball rolling and chocolate dipping.  Try and use organic coconut where you can, I have included a link below where you can get some online from South West Provisions.

You will get a bit of oil coming out as you squeeze these into balls, it’s easier to squeeze rather than try and roll.

Chocolate Coated Coconut Balls

Description

Made simply with coconut, sweetener, chocolate, blitzed and rolled into balls!


Ingredients

Scale
  • 1½ cups desiccated coconut
  • 3 tablespoons honey or rice malt syrup
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips, dark or milk

Instructions

THERMOMIX METHOD

Place all ingredients into the TM mixing bowl and blend 15 sec / speed 10.  Scrape down sides and repeat.  Roll mixture into teaspoon sized balls.  Place in freezer for at least an hour to chill.

Melt chocolate chips by placing a bowl over a saucepan with a little simmering water.  Using two forks, roll each coconut ball in the chocolate until completely covered. Scoop the ball out with the fork and let any extra chocolate drip off, then gently place onto lined tray and chill until the chocolate has hardened.

Store in the fridge in an airtight container.

NON THERMOMIX METHOD

Place all ingredients into a food processor and blitz until it forms a dough like consistency.  Roll mixture into teaspoon sized balls.  Place in freezer for at least an hour to chill.

Melt chocolate chips by placing a bowl over a saucepan with a little simmering water.  Using two forks, roll each coconut ball in the chocolate until completely covered. Scoop the ball out with the fork and let any extra chocolate drip off, then gently place onto lined tray and chill until the chocolate has hardened.

Store in the fridge in an airtight container.

Notes

When melting the chocolate, do it slowly and make sure the bottom of the bowl isn’t touching the simmering water.
