I like to have a simple plan for school lunchboxes and these healthy chicken wraps are great as there are a few flavour options depending on what you have in the fridge. These are made easily with leftover roast chicken and kid friendly flavours, that can be layered so the wraps don’t get soggy in their lunchboxes.
The trick to avoid soggy sandwiches is to use cheese or well dried lettuce to wrap around ingredients like tomato or avocado that could make the bread soft. Place mayo in the centre rather than spreading straight onto the bread. You can squeeze a little lemon or lime juice onto the avocado, but I actually find it doesn’t go brown by the time the kids eat it at lunch.
These are great when you want to know what to do with leftover roast chicken. You could use leftovers from any of these roast chicken recipes;

Ingredients
CHICKEN + AVOCADO
- 1 wrap
- ½ cup cooked shredded chicken
- ½ avocado
- 2 lettuce leaves
CHICKEN, HAM + CHEESE
- 1 wrap
- ½ cup cooked shredded chicken
- 2 slices Jarlsberg cheese
- 4 slices ham
- ½ carrot, grated
- 1 tablespoon mayonnaise
CHICKEN CAESAR
- 1 wrap
- ½ cup cooked shredded chicken
- ¾ cup thinly sliced lettuce
- 1 slice cooked bacon, diced
- ¼ cup grated parmesan cheese
- 1 tablespoon caesar salad dressing
CHICKEN + SALAD
- 1 wrap
- ½ cup cooked shredded chicken
- ¾ cup thinly sliced lettuce
- ¼ cucumber, thinly sliced
- ½ tomato, thinly sliced
- ½ carrot, grated
CARROT, CUCUMBER + APPLE
- 1 wrap
- ½ cup cooked shredded chicken
- ¼ cucumber, grated
- ½ green apple, grated
- 2 slices Jarlsberg cheese
- 1 tablespoon mayonnaise
Instructions
CHICKEN + AVOCADO
Spread the lettuce over the wrap, top with avocado and chicken. Spread a little extra avocado on the edge of the wrap to seal together.
CHICKEN, HAM + CHEESE
Lay the slices of cheese on the wrap. Top with ham, chicken, carrot and mayonnaise. Use a little mayonnaise to seal the wrap.
CHICKEN CAESAR
Spread the lettuce on the wrap. Top with chicken, bacon, Caesar dressing and parmesan. Use a little dressing to seal the wrap.
CHICKEN + SALAD
Spread the lettuce on the wrap. Top with cucumber, tomato, chicken and carrot. Use a little butter, cream cheese or mayonnaise to seal the edge of the wrap together.
CHICKEN, CUCUMBER + APPLE
Lay the slices of cheese on the wrap. Top with chicken, cucumber, aple and mayonnaise. Use a little mayonnaise to seal the wrap.
Notes
Use lettuce or cheese as the first layer to stop the wraps from going soggy.
Make sure sauces and tomatoes are at the centre of the wraps. (these will make the bread soggy)
You can make these the night before, just wrap tightly in plastic wrap.
