This yummy Chicken Teriyaki Lunchbox is super easy to make using left over Air Fryer Chicken Teriyaki from the night before. As busy parents, this is a great way to save time in the morning when preparing school lunchboxes as each compartment can be prepped the night before.

I love to mix things up for my kids instead of a traditional sandwich lunchbox and I find they tend to eat more when I give them something a little different. This Chicken Teriyaki Lunchbox offers a fulfilling balanced meal, ensuring your kids feel energised and satisfied throughout your day.

CHICKEN TERIYAKI LUNCHBOX

My Chicken Teriyaki Lunchbox features succulent pieces of tender chicken, perfectly air fried or grilled and glazed with my homemade teriyaki sauce, delivering a mouthwatering experience with every bite. CHICKEN TERIYAKI LUNCHBOX INGREDIENTS

  • WATERMELON – loaded with micronutrients like vitamins and minerals that will help your children grow and develop.
  • STRAWBERRIES – a great source of vitamin C. Alternatively you can swap these for raspberries.
  • CUCUMBER – I am always trying to add in extra vegetables wherever I can and cucumber seems to be a hit with my kids.
  • PRETZELS – a salty treat for the kids, instead of sugar.
  • CHEESE – cut into cubes for easy eating. I have used cheddar but you can use any cheese that your kids prefer.
  • RICE – I cooked one cup of rice but as an alternative you can use to pre cooked rice to save time. Adding a splash of soy sauce can add extra flavour if needed.

How do you keep chicken teriyaki safe in a lunchbox?

Most lunchboxes these days come with ice packs and are insulated. This is perfect for making sure your children’s food stays safe until lunchtime.

How long can you store chicken teriyaki?

You can store any leftover chicken teriyaki in the fridge for up to 3 days. Make sure it’s in an air tight container.

What goes well with chicken teriyaki?

I like to serve my chicken teriyaki with rice and cucumbers. I think these go well together. Avocado is another great ingredient that goes well with chicken teriyaki.

HOW TO MAKE CHICKEN TERIYAKI LUNCHBOX

Firstly I chopped the watermelon into cubes and chopped off the tops of the strawberries.

Then I chopped the cucumber to fit the size of my particular lunchbox.

Cut cheese into cubes and add a small handful of pretzels.

Slice left over chicken teriyaki into fingers size portions for easy eating. Add the cooked rice to the lunchbox and top with the sliced chicken.

Description

The recipe below is for our Air Fryer Chicken Teriyaki. 


Ingredients

Scale
  • 4 x skin on boneless chicken thighs

MARINADE

  • 2 tbsp soy sauce or tamari
  • 1 tbsp coconut sugar
  • 1 tbsp mirin
  • 1 tbsp avocado oil

TO SERVE

  • rice
  • sesame seeds
  • spring onion
  • cucumber
  • avocado

Instructions

Place all marinade ingredients in a bowl and marinate chicken for 20 minutes.

AIR FRYER 

Place marinated chicken into air fryer and cook for 10-12 minutes at 200°C.

To check if cooked, pierce the thickest part of the thigh with a knife to see if the juices run clear.

PAN

Place frypan on low heat, add marinated chicken.Cook skin side down to start chicken after 5 minutes and cook for a further 5 minutes or until cooked through.

Notes

Cook rice as per packet.
