Chicken Stir Fry with Broccoli + Carrot Noodles
This is just a really simple stir fry without too many ingredients and simple, light flavours that both little kids and adults love as an easy midweek dinner. You don’t need a big list at the grocery store and you can whip it up whilst listening to the kids do their homework, it is that easy! If you get yourself a spiralizer, you can get the kids to make the carrot noodles themselves, they love it. This is the one I use, you can get it here. My 5 year old was able to do it with a little help from me. You can even leave out the rice noodles all together for a really great dairy free, gluten free, paleo dinner.

Chicken Stir Fry with Broccoli + Carrot Noodles, simple flavours that are kid friendly and can be ready in minutes!
Ingredients
- 2 cloves garlic
- 500g chicken breast, sliced into small strips
- 2 tablespoons coconut oil
- 1 head broccoli, cut into small pieces, including stem
- 1/3 cup soy sauce
- 2 carrots, peeled into ribbons
- 1 packet rice noodles
Instructions
Cook rice noodles as per packet instructions and then run under cold water to stop the cooking processes, drain and set aside.
Warm the oil in a large frypan or wok over medium heat, then add the garlic and chicken and sauté for 5 minutes until the chicken has turned white. You don’t want to over cook the chicken too much at this stage.
Add the broccoli and soy sauce and cook for 5 minutes whilst stirring. Add the carrots and cook a further 5 minutes. Stir through the rice noodles and then it’s done!
Notes
You can buy a spiralizer to make your carrot noodles, or just use a peeler and keep peeling through the whole carrot.
