CHICKEN BALLS LUNCHBOX

I try to change things up for my kid’s lunches and I like to try to include a variety of different foods. Sometimes this can be difficult as I feel I have run out of ideas but simple fruits and vegetables are a healthy option and also visually appealing to the kids.

LEFTOVER CHICKEN BALLS LUNCHBOX INGREDIENTS

  • CHEESE – Cheddar cheese is a favourite for my kids, but you can use any cheese you prefer.
  • CRACKERS – rice crackers are my preferred choice but again you can use whatever crackers you kids prefer.
  • SALAMI – pairs well with crackers and cheese.
  • KIWI – a great source of Vitamin C. Did you know that kiwi fruit has more Vitamin C than an orange?
  • RICE – any rice of your choice. Good carbohydrates to get the kids through the school day.
  • CHICKEN BALLS – you will find my full Chicken Balls recipe here.
  • CHERRY TOMATO – My kids love cherry tomatoes as they can be super sweet which can be great for a sweet tooth.

FREQUENTLY ASKED QUESTIONS

Are chicken balls the same as chicken nuggets?

No, these chicken balls are much healthier. If your kids prefer chicken nuggets, you can always shape these into chicken nuggets so they look similar.

Can these chicken balls be frozen?

Yes, they sure can. Once cooked allow chicken balls to cool to room temperature then freeze them on a tray. Once frozen transfer to a freezer bag and store for up to 2 months.

Can I make these chicken balls gluten free?

You can either use GF breadcrumbs or skip breadcrumbs altogether and they still taste great.

Can I use different ingredients to make up the remainder of the lunchbox?

Yes, if your kids prefer any particular food you can use this instead of the cheese and crackers etc. I do try to have some of the different food groups in my kids lunchboxes so I know they are having a variety of foods.

HOW TO MAKE CHICKEN BALLS LUNCHBOX

Firstly cook the rice as per packet instructions.

For the Crunch & Sip container, I sliced watermelon and apple into bite sizes to fit the container.

Chop the salami, cheese and cucumber into slices to place in the lunchbox with some crackers. Make sure you place cheese on either side of the crackers as if the cucumber sits next to the crackers there is a chance the crackers will be soggy by lunchtime.

Next, I cut the kiwi fruit in half with the skin on and place it in the lunchbox with a spoon. I do it this way as I find that if I peel the kiwi and cut it into fingers it tends to go mushy by lunch time with movement of the lunchbox.

Add the cherry tomato to the smallest compartment. You can cut this in half if you wish.

Once the rice is cooked place enough to fill most of the main compartment of the lunchbox, then add chicken balls. I usually add 4 balls as this seems to be the perfect amount for my kids.
