Chicken + Avocado Cheese Quesadillas
I am a little bit obsessed with how delicious and easy quesadillas are. Both my kids love them and it’s really easy to have the ingredients on hand all the time. Just flatbreads in the pantry and cheese in the fridge, then fill with any other leftovers you have. These take the cheese on toast for dinner up a level, yet are just as quick and the kids love them just as much.

Description
Chicken + Avocado Cheese Quesadillas made with leftover roast chicken, big chunks of avocado and gooey cheese, toasted between two crispy tortillas.
Ingredients
- 6 tortillas
- 1–2 cups leftover cooked roast chicken
- 2 avocados, diced
- 3 cups mozzarella cheese, grated
Instructions
Sprinkle half the cheese over 3 of the tortillas, top with chicken and avocado. Add the remaining cheese and then top each with the one of the last 3 tortillas.
Place frypan over medium-high, add a quesadilla, press down lightly and cook for 2 minutes on each side, until golden brown and crispy.
Cut each into 6 triangles and serve.
Notes
These are great for lunchboxes too.
