Cheesy Pull Apart Garlic Bread

Garlic bread is quite an indulgent food, but I do love using it during cold and flu season to give my kids a good hit of garlic.  My son, devours garlic bread, so it’s an easy way to load him up to fight off as many germs as possible.  I usually have a roll of garlic butter in the freezer, which I slice off rounds and put on top of any leftover, starting to go stale bread to give it a second life.  Especially handy at the end of the grocery shopping week when stocks are getting low and you need to bulk up your dinner.  Just mix 2 or 3 minced garlic cloves into a packet of softened butter and roll in plastic wrap.  (you don’t need to melt the butter)

You could make this recipe from scratch using my super easyCheesy Pull Apart Garlic Bread | Kids Eat by Shanai No Knead Bread recipe.
I think recipe tastes the best when made with really fresh bread with a crunchy crust.  You could certainly use wholemeal or multigrain bread for a slightly healthier version.

Description

Ingredients

Scale
  • 1 loaf of sourdough bread
  • 1/3 cup butter, melted
  • 1 clove garlic, minced
  • 1 cup grated Mozzarella cheese
  • parsley to serve

Instructions

Pre heat oven 180°C.

Mix together the butter and garlic.

Cut the loaf into thick slices, without cutting all the way through.

Brush each gap in the bread with butter and stuff a small handful of cheese into each gap.

Wrap the loaf in tin foil and bake in oven for 15 minutes.

Remove foil and bake a final 5 minutes to get crispy.

Serve while still warm and cheese is gooey.

Notes

You can use any loaf of bread you like, I just prefer sourdough.

If you don’t have Mozzarella cheese, grated cheddar is fine, just not as gooey!
