Cheesy Oven Baked Meatballs
These meatballs are cooked in a hot oven to seal in the juices resulting in tender juicy meatballs with plenty of gooey cheese! Perfect as a gluten free dinner served with zucchini noodles or mashed potato.
This has to be the easiest way to cook meatballs, you don’t have to stand over a frypan turning them with oil splattering everywhere. These you can put in the oven and get on with something else. They are great to put in the kid’s lunchboxes. We have recently gone gluten free with Sam and trying to build his iron levels, so these are perfect at getting in some extra protein at lunchtime.

- Total Time: 40 minutes
- Yield: aprox 14 meatballs 1x
Description
Cheesy Oven Baked Meatballs made gluten free and baked in one dish in the oven, super easy!
Ingredients
- 1kg pork or beef mince (or a mixture)
- 1 cup grated mozzarella
- ½ cup grated parmesan
- 1 egg
- 250g / 1 cup tomato pasta sauce ( I like to use Crunch Preserves)
- 1 cup grated mozzarella for topping
- fresh basil or parsley to serve
Instructions
Pre heat oven to 200°C.
In a large bowl mix together the mince, mozzarella, parmesan and egg. Scoop out large tablespoons of mixture, roll into balls and lay in a single layer in a baking dish. You may need to spray the dish lightly with cooking oil first.
Bake for 15-20 minutes, until cooked through. Remove from oven and drain any grease. Pour over the pasta sauce and top with mozzarella. Bake an additional 5-10 minutes until cheese has melted.
Garnish with fresh parsley or basil and serve.
Notes
Make these meatballs larger than you like them as they do shrink quite a bit when they cook.
