Simple, soft, fluffy pancakes made quickly and easily. So easy, you can make them during the week on school mornings and make extra to put into school lunchboxes.

This is the most basic pancake recipe with just 3 ingredients, even your little kids will remember how to make these!

Basic Pancake Recipe

Homemade pancakes don’t need to be complicated and don’t need a heap of ingredients. Keep them simple and then you can add the sweetness into the toppings.

This recipe is great for when your kids are old enough to start cooking themselves.  They can get the mixture ready for you to do the final cooking.

Tips for cooking the perfect pancake

  • Don’t over mix the batter – the ingredients should be well combined but the mixture doesn’t have to be lump free. Mixing the batter for too long will overdevelop the gluten in the flour which will result in tougher pancakes
  • Use fresh flour – self raising flour is essentially baking powder with plain flour, and baking powder will stop working after a while. If you don’t use a lot of self raising flour, only buy small amounts so you know it is always fresh.
  • Make the batter fresh – make the batter the morning you want to cook your pancakes, this will result in lighter, fluffier pancakes.
  • Thick batter consistency – the batter should be reasonably thick and drips off a spoon slowly.
  • Good quality crepe pan – a really good crepe pan is made so the surface is perfectly flat, meaning you can make a few evenly sized pancakes at once. If you don’t have a crepe pan, a large flat frypan is fine.
  • Pan temperature – ensure your pan is around medium heat, too hot and they will get scorched and too cold they will flatten out.
  • Oiling the pan – just add a thin layer of oil or butter, either use a spray or a pastry brush works great.
  • Cooking times – cook on the first side until bubbles start to appear on the surface of the batter, then flip until golden, around 1-2 minutes per pancake.

Description

Simple, soft, fluffy pancakes made quickly and easily. So easy, you can make them during the week on school mornings and make extra to put into school lunchboxes.


Ingredients

Scale
  • 1 cup Self Raising Flour
  • 1 cup milk
  • 1 egg

Instructions

Whisk together all ingredients, either by hand or in a food processor.

If you have time, let sit in the fridge for 30 minutes.

Heat fry pan with a little oil over med-high heat.  Cook 1 tbsp of mixture at a time.

Flip when the edges start to bubble ( about a minute or so).

Cook for a further minute on the other side.

Notes

For thinner pancakes use plain flour.

  • Prep Time: 3 minutes
  • Cook Time: 5 minutes
