STEP 1
Combine the dry ingredients in a large bowl.
STEP 2
Melt butter and golden syrup over low heat.
STEP 3
Mix bicarb & water, add to saucepan, then to dry ingredients.
STEP 4
Spoon into balls then bake for 20 mins.
Anzac Biscuits
Anzac’s are kind of like a cookie that’s pretending to be healthy, I mean they have oats in them don’t they and if you put one next to a chocolate chip cookie, the Anzac would definitely look the healthiest. I don’t think they actually are healthy in any way, possibly a little more filling than your average cookie as they are filled with rolled oats. Anyway, they are EASY, TASTY and made with really SIMPLE ingredients, so that makes them a winner for me!
Mum has been making these for us since we were kids without ever changing the recipe and I don’t think it’s a recipe that needs changing. I am posting this, but also working on an Anzac flavoured slice and so keeping this biscuit recipe really traditional.
These cookies come out with a crunchy edge and chewy centre, just how I think Anzacs should be. I have tried other recipes, but they don’t get that perfect chewiness these do and sometimes turn out too thick. Just be warned, these are super moorish and you won’t be able to stop at one!

Anzac Biscuits
- Total Time: 30 minutes

Ingredients
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup rapadura sugar
- ¾ cup desiccated coconut
- 110g butter, roughly chopped
- 1 tablespoon golden syrup
- 1½ teaspoon bicarb soda
- 2 tablespoons boiling water
Instructions
Preheat oven to 140°C (fan forced)
Combine oats, flour, sugar and coconut in a large bowl.
Melt butter and golden syrup over low heat.
Mix bicarb soda and water, add to melted butter, give a quick stir and mix into dry ingredients.
Spoon tablespoon sized balls onto a lined baking tray, allow room for spreading. Bake 20 minutes, then cool on tray. Loosen cookies while they are cooling on tray.
Notes
Store in an airtight container.
