French toast is a dish made of bread soaked in eggs and milk, then fried. This version is infused with Acai and cut into bite sized pieces.
Acai Sourdough French Toast Bites
These were inspired by Nagi from Recipetin Eats. She made some amazing looking Cinnamon French Toast Bites. I thought I would infuse mine with Acai, hoping they would turn out a really cool purple, they didn’t, but still a nice way to sneak in some extra goodness. My kids love both french toast and pancakes and I think they both can easily sneak in some hidden healthy stuff.
Last time I posted French Toast I cut them into sticks with lemon butter to dip in, you can see that post here. I think it’s easier for little hands to eat if cut into sticks or squares.

Description
Ingredients
- 2 eggs
- 1/4 cup coconut cream
- 1 teaspoon Acai powder
- pinch of salt
- Half a loaf of sourdough ( a few days old is best)
- coconut oil for cooking
- sugar to coat (optional)
- maple syrup to serve
Instructions
Whisk together the eggs, coconut cream, Acai and salt in a bowl.
Remove crusts from bread and cut into squares.
Heat a little coconut oil in a large frypan and working in batches, toss bread through egg mixture, shake off excess and place in frypan. Turn cubes as they golden on each side. Once cooked on all sides remove from pan and straight into the sugar (if using) and toss to coat.
Repeat with remaining bread and serve with maple syrup.
Notes
My kids liked these just as much without dipping them in sugar.
