STEP 1
Peel and mash a small, ripe banana in a bowl.
STEP 2
Whisk in one egg.
STEP 3
Add 2 tablespoons of buckwheat flour.
STEP 4
Whisk until smooth, even easier if you do this in a food processor.
3 Ingredient Banana Pancakes
These are possibly the easiest gluten free pancakes you will make! You just need to be a bit more delicate when cooking them and keep them relatively small in size, but other than that really easy.
These work best at about the size of an ice cream scoop of batter for each pancake, then you want to cook them on a slightly lower heat than regular pancakes so they cook right through. A good pancake pan is as flat as possible, I love this electric crepe pan I use. You can get something similar here www.amazon.com.au.
As you can see from the step by step photos, this is a great recipe that kids can help with, my kids love cracking the eggs. You can top these with any of your favourite pancake toppings, we love Strawberry Jam, sliced banana, raw honey or maple syrup, even a dollop of yoghurt is delicious!

- 1 small banana
- 1 egg
- 2 tablespoons buckwheat flour

FOOD PROCESSOR METHOD
Place all ingredients into a small food processor (I used my Thermomix) and blitz just for a few seconds until smooth.
Spoon ice cream scoop sized portions of batter onto a non stick pan, or add a little butter or oil first. Cook over medium heat for a few minutes until it starts to firm, then gently flip and cook til cooked through.
NON FOOD PROCESSOR METHOD
In a bowl mash the banana really well with a fork. Whisk in the egg, then add the flour and whisk really well until smooth.
