Could dinner get any easier than this? Super simple and super healthy with only one dish to wash!
It almost seems impossible to have dinner ready and on the table by 6pm in Summer. Our house is really hot with no insulation (exposed timber ceilings), no air conditioning and more windows than walls…… it’s almost like camping sometimes, or worse, it can be hotter inside that outside in the heat! So the idea of standing in a hot kitchen around a hotplate is less than appealing and setting up the water slide to run down our long driveway is more…… in comes the invention of one pot, throw it in the oven dinners. Not that I invented them, I have just made my versions. This one was inspired by Pinch of Yum’s Perfect Baked Salmon with lentils and lemon herb sauce.
You can replace the rice and quinoa with a mix of rice, quinoa, lentils, to whatever ratio you like (or whatever you have in the pantry!) I love the even mix of red quinoa and brown rice.
One Tray Oven Baked Salmon with quinoa and rice
2-4 salmon fillets
1 tbsp soy sauce
2 tsp honey
2 tsp sesame oil
1 tsp apple cider vinegar
1 cup brown rice
1 cup red quinoa
4 cups vegetable/chicken stock
Combine marinade ingredients and pour over salmon and leave for 15 mins.
Pre heat oven 230°C.
Place washed rice and quinoa into large baking tray with the stock. Bake 45 mins.
Remove and gently fluff with a fork. Add the salmon and veggies, drizzle with a little olive oil and bake a further 10 mins.
Turn oven off and allow to rest in oven til salmon is cooked through.
