Homemade Granola

We have our first wobbly tooth in the house!  Well first of the kids, I have obviously had my share of wobbly teeth.  Sam is beyond himself with excitement and lucky for me he thinks the tooth fairy leaves chocolate gold coins under your pillow….. bargain!

Homemade Granola Easy and healthy Homemade Granola guide! Mix and match using your favourite ingredients right there in your pantry

This is one of those recipes that develop from avoiding a trip to the grocery store.  Digging around the fridge or pantry and coming up with possible combinations.  Granola is such a versatile recipe, pretty much anyone could make it at any time by doing the same sort of scrounging.   Admittedly I finished off a heap of almost empty packets, cleaned out my pantry and introduced a new breakfast cereal without leaving the house.

We are using this as a snack on the go or on top of fruit and yoghurt.  I wouldn’t recommend having a full bowl of this every morning for breakfast, may be a tad over indulgent…….

Granola is a fairly basic mix of oats, nuts, spices, oils, sweeteners and fruit.  Really easy to mix and match.  You can leave your nuts and seeds whole or crush them slightly.  Don’t put them in a food processor or it will dry out your granola too much.  Anyway, just have some fun with it and use this guideline to mix and match your own!

  • 1/2 cup coconut flakes
  • 1 tsp cinnamon
  • pinch of salt

In a large bowl combine the oats, nuts and seeds, coconut, cinnamon and salt.

In a smaller bowl combine the coconut oil, maple syrup and vanilla then pour this mixture over the oats mixture and mix until well combined.

Bake for 40 minutes, tossing after 20 minutes.

Stir through dried fruit, allow to cool then store in an airtight container.

Notes

For clumpy granola, mix through fruit about 10 minutes before the end of cooking and then allow granola to cool in tray.
