Classic Zucchini Slice made really easily, super tasty and a great way to sneak in a few extra veggies into your kid’s lunchboxes!
STEP 1
Grease your baking dish with butter and lightly whisk the eggs.
STEP 2
Finely dice the onion and bacon. Grate the zucchini and cheese.
STEP 3
Mix everything together in a large bowl.
STEP 4
Pour into baking dish and bake 35-40 minutes at 170°C.
Zucchini Slice
I am always looking for healthy alternatives to sandwiches to pack into our school lunchboxes. Georgia loves eggs and they both love bacon, so thought I would have a go at this classic Aussie slice and add in a few flavour variations. My tips for the perfect slice are; pre cook the bacon first so it’s nice and crispy, squeeze any moisture out of the grated zucchini before adding to the bowl and if re heating, use the oven rather than the microwave as it tends to come out a bit soggy from the microwave.
Make recipe as per below, leaving out the bacon.
Make recipe as per below, adding in 100g crumbled goat’s cheese.
Make recipe as per below, adding in 200g roast pumpkin & 1 cup corn kernels.

Zucchini has such a mild flavour it is a great vegetable to add in with stronger flavours, such as the bacon and tasty cheese in this slice. Zucchini is a great source of potassium and fibre.

Ingredients
- 1 tablespoon butter
- 6 eggs
- 2 zucchini, grated
- ½ onion, diced
- 3 rashers bacon, cooked & sliced
- 1 cup tasty cheese, grated
- 1 cup self raising flour
- salt & pepper to season
Instructions
Preheat oven to 170°C. Grease a 27cm x 18cm slice tray with the butter. In a large bowl whisk together the eggs, add in the remaining ingredients and stir well to combine. Pour into greased dish and bake for 35-40 minutes until golden on top and cooked through. Allow to cool slightly before cutting.
Notes
This freezes well, to reheat place in a hot oven until warmed through completely.
For Vegetarian – leave out the bacon.
You could also add goat’s cheese, roast pumpkin, corn kernels, grated carrot or frozen peas.

If you don’t have access to chickens in your backyard or a neighbours, it can be really hard knowing which eggs are coming from chickens that are well looked after. There is some great information on the Local Harvest website and they have a map where you can put in your town and find the nearest small-scale poultry farm and where you can buy their eggs.
