WINTER RECIPES THAT ARE EASY TO MAKE

Heading into the cooler months here in Australia, I thought I would share my favourite Winter Recipes That Are Easy To Make. For me, winter is all about warming the soul and what better way than with hearty, delicious and healthy meals. I hope you enjoy these winter recipes that are easy to make just as much as I do.

1. ONE POT SPAGHETTI MEATBALLS

One Pot Spaghetti and Meatballs, all cooked together in one pot!  Less dishes and more free time! Made with really simple, minimal ingredients. Succulent meatballs full of flavour from cooking in the sauce and with the pasta. This is a great dinner when camping, which is where I learnt the recipe originally.

2. SLOW COOKED LAMB SHANKS

These will be the easiest lamb shanks you ever cook!  They are a busy Mum’s best friend, just set and forget!

3.  LEFTOVER CHICKEN TACOS BAKED IN THE OVEN

Leftover Chicken Tacos baked in the oven & made with leftover barbecue chicken. My favourite Chicken Taco Recipe and it’s so easy! You could also make as pulled pork tacos using leftover slow cooked pork. These are ready in less than 30 minutes and as they are baked with the filling and cheese in the oven, it’s a perfect taco recipe for kids. So much less mess!

5. VEGAN CHILI SIN CARNE

This hearty and easy chili sin carne will be your new favorite weeknight dinner! Only healthy budget-friendly ingredients are needed for this flavourful and high-protein 30-minute meal.

6. CREAMY ROASTED PUMPKIN SOUP

Meet my favourite pumpkin soup recipe. It’s super creamy (thanks mostly to the pumpkin, with a little help from coconut milk or cream) yet plenty healthy, too. It’s gently spiced, but I made sure that the pumpkin flavor shines above the rest.

7.  LASAGNA ROLL UPS

Lasagna Roll-ups taste like a classic lasagna but they are made a little differently. Lasagne is a firm favourite in my house but this version fives a little twist on the traditional family meal.

8. CHICKEN TERIYAKI BURGERS WITH SESAME SLAW

These Chicken Teriyaki Burgers are amazingly simple while also being ridiculously delicious. Caramelized burgers that are fried up in minutes, a pile of sesame slaw on top, and a perfectly toasted bun. YUM.

9. IMMUNITY BOOSTING GREEN GODDESS SOUP

This Green Goddess Soup defies all expectations of what green soups typically are. It doesn’t taste like pureed grass for one. It’s actually delicious. And it’s being shared by me, a self confessed Cheese-Lovin’-Carb-Monster (who ever thought THAT would happen!) Packed with immunity-boosting vegetables, this verdant soup is just what you need to fight off winter blues.

10. ONE POT MOUSSAKA BEEF RICE PILAF

Here’s a great new beef mince recipe to try! Think – Greek Moussaka flavours, in risotto form in a handy one-pot recipe. Eggplant, beef, tomato, lots of garlic and oregano. Cosy. Easy. Satisfying. Utterly delicious!
