This Australian White Christmas Slice recipe is like a white chocolate rocky road and a really easy, yet impressive dessert. Perfect for Christmas Day, or as I am making it, for end of year teacher’s gifts.
WHITE CHRISTMAS SLICE
This super easy Christmas slice always brings back memories of Christmas Day to me. The best part about this recipe is that it is a no bake slice, making it super quick to whip up with only a few simple steps.
The hardest part is melting the chocolate and not getting a tummy ache from picking at all the ingredients as you make it. You can easily mix and match the dried fruit and nuts to your favourites. I try and include as many Christmassy flavours as possible, cherries and pistachios always remind me of Christmas.

WHITE CHRISTMAS SLICE INGREDIENTS
- WHITE CHOCOLATE – as this is the main ingredient in this recipe I would suggest using a good quality white chocolate and preferably chocolate melts as these are the easiest to melt.
- RICE BUBBLES – any brand of rice bubbles or puffed rice will work.
- MINI MARSHMALLOWS – I like to use marshmallows in my White Christmas Slice to make it more like a rocky road but if you prefer you can leave these out for a more traditional recipe.
- SHREDDED COCONUT – I prefer to use shredded coconut but as an alternative you can use desiccated coconut.
- PISTACHIOS – buy shelled pistachios and roughly cop.
- MACADAMIAS – either half or whole are fine, as you need to roughly cop either.
- DRIED APRICOTS + MANGO – you can find these in the dried fruits section in your local supermarket.
- GLACÉ CHERRIES – if you can’t find glacé cherries, you can use sweetened dried cherries.

Can I use milk or dark chocolate?
White Christmas Slice is traditionally made from white chocolate hence the name, but you can use milk or dark chocolate if you prefer.
Can you freeze White Christmas Slice?
Yes, you can freeze this slice which is perfect for busy families to make in advance. Wrap in cling wrap and place in a freezer safe container to store for up to 2 months in the freezer. Defrost in the fridge.
Can I make this nut free?
Yes absolutely, just leave out the nuts in the recipe and replace with more dried fruit or you can try adding sultanas and raisins.
How long can you keep White Christmas Slice?
This slice can be kept for 2 weeks in the fridge, in an air tight container.
HOW TO MAKE WHITE CHRISTMAS SLICE
Step 1
Combine most of the dry ingredients in a large bowl, just leave out the cherries and mango.
Step 2
Melt the chocolate over a double boiler. (Chocolate in a bowl sitting on top of a saucepan with simmering water) then pour into bowl.
Step 3
Mix to combine.
Step 4
Add the cherries and mango and stir these through.
Press down into tray and set in the fridge.
White Christmas Slice
Ingredients
2 cups / 70g rice bubbles
11/2 cups / 70g mini marshmallows
1 cup / 75g shredded coconut
1/2 cup / 70g shelled pistachios, roughly chopped
1/2 cup / 70g macadamias, roughly chopped
1/2 cup / 75g dried apricots, roughly chopped
400g white chocolate, roughly chopped
1/2 cup / 100g chopped glacé cherries, roughly chopped
1/2 cup / 50g dried mango. roughly chopped
Instructions
In a large bowl combine the rice bubbles, marshmallows, coconut, pistachios, macadamias and apricot.
Place a bowl over a saucepan with simmering water and melt the chocolate. Make sure the water isn’t touching the bowl and just simmering gently.
Once melted, mix in the chocolate mixture and stir well to combine. Add the cherries and mango and stir through.
Pour into a large 20cm x 30cm tray with sides, lined with baking paper. Lay another sheet of baking paper on the top and push down to flatten and spread out evenly.
Place in the fridge for 2 hours to set, then cut into pieces.
Notes
You could swap any of these dried fruit with others such as glacé pineapple, cranberries or sultanas.
