These are very much a cheats version of lime tarts, but any busy Mum will know, sometimes that’s the best you can do. They taste amazing, require no baking, just mix and set in the fridge.

So we have pretty much been up since 3am with Georgia’s first ear infection. She is now on antibiotics. It is such a hard decision whether to give your kids antibiotics or not. I had to decide whether to let her body fight the infection itself which will take 2 or 3 days longer, or give her the antibiotics which would fight it faster. I know antibiotics aren’t great for anyone’s health, but once you have been up half the night with a baby screaming in pain, you want to heal them as quickly as possible. I have decided to give her the antibiotics and just focus on giving her plenty of probiotics with kombucha etc…….. ah the tough parent decisions never end…….. and are probably just beginning…

- Yield: 12 1x
Description
Ingredients
- 125ml / 1/2 cup lime juice
- 1 lime, zested
- 1 tin / 395g sweetened condensed milk
- 12 store bought medium pastry cases
Instructions
In a bowl combine, with a whisk, the lime juice, zest and milk.
Spoon into pastry cases and place in the fridge to set for 4 – 6 hours.
Garnish with a slice of lime and thin slices of peel.
Notes
You could make these lemon tarts by replacing lime with lemon.

Hi…. I just got a good tripod and so now can set & focus the picture then I was holding the ice cream at the base & took a heap of pics. My first ear infection so a new challenge for us!
