Sweet Potato Creamy Pasta Sauce is an alfredo inspired sauce using sweet potatoes. Perfect for a simple, mid week vegetarian dinner option!
Sweet Potato Creamy Pasta Sauce
My kids prefer their pasta plain with just a little butter, which obviously isn’t at all a nutrient dense meal. This is my attempt at getting them to eat pasta with veggies in it. We always have sweet potatoes in our house, baked sweet potato chips are pretty much a staple, so I figured this flavour would have to be a winner with both kids.
You could easily add chicken or even salmon pieces if you want to add some protein. It would be perfect with some spinach through also, but I wasn’t going to push my fussy eaters too far! Maybe next time.

Description
Ingredients
- 400g sweet potato puree
- 1 cup pouring cream
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- squeeze lemon juice
- pinch salt
- 1/2 cup finely grated parmesan
- 400g fettuccine pasta
- extra parmesan to serve
Instructions
Cook fettuccine as per packet instructions.
In a large frypan over medium heat, bring the cream and sweet potato to a gentle simmer for 5 mins, until thickened slightly.
Add the tomato paste, olive oil, lemon, salt and parmesan and stir through until well combined. Leave on heat until reaches a gentle simmer.
Remove from heat and add the fettuccine to the sauce and toss well to coat.
Serve topped with extra parmesan.
Notes
If adding chicken or salmon, cook meat separately and stir through at the end with the pasta.
