Coconut and Apricot Balls
We have just gotten back from holidays down south, while we were there Sam (age 3) says to me “Mummy, I have some good news and some bad news….” so I said “What’s the good news?” and he said “I love going on holidays!” “and what’s the bad news?” “I don’t want to go home…..” ha ha funny kid.
I know everyone is always looking for easy to make snack’s that are nut free so can be put into lunchboxes. These are great as they are a sweet so your kid’s will love them as a treat, yet they are loaded with coconut, chia seeds, sunflower seeds and apricots. Really quick and easy to make and this recipe makes 30, so perfect for a week of lunches!

Ingredients
- 200g dried apricots
- 30g sunflower seeds
- 1 tbsp chia seeds
- 150g desiccated coconut
- extra coconut for rolling
- 200g sweetened condensed milk
Instructions
THERMOMIX INSTRUCTIONS
Place the apricots, sunflower seeds and chia seeds into the mixing bowl and blend for 1 sec / turbo, 7 times until really finely chopped.
Add the coconut and condensed milk and mix 10 sec / speed 3, scrape down sides and repeat.
Place extra coconut on a plate, scoop out tablespoons of mixture, roll into a ball then roll in the coconut to coat. Store in a container with a lid and refrigerate for 2 hours until firm.
NON THERMOMIX METHOD
Place apricots, sunflower seeds and chia seeds into a food processor and pulse until finely chopped.
Add the coconut and condensed milk and pulse until well combined.
Place extra coconut on a plate, scoop out tablespoons of mixture, roll into a ball then roll in the coconut to coat. Store in a container with a lid and refrigerate for 2 hours until firm.
