Sugar Free Custard with Apple Puree
This custard has absolutely no sweetener in it other than a little vanilla and I think it is delicious! I had no idea custard could still taste this good without sugar. Paired with cooked apple, you get the sweetness from the apple. This was also a lot easier to make than I was expecting, quite quick, you don’t have to spend ages over a hot plate slowly stirring your custard.

Ingredients
- 1 cup milk
- 1/2 cup whipping cream
- 1 tsp vanilla extract
- 2 egg yolks
- 1 1/2 tsp cornflour
Instructions
In a saucepan over med-high, heat the milk, cream and vanilla until they are just about to boil, but not quite.
While this is heating, in a bowl whisk together the egg yolks and cornflour.
Continue to whisk the eggs as you slowly add the milk mixture, then return to saucepan and stir continuously over a low heat until thickens. This should take 2-3 minutes.
Serve over cooked apples.
Notes
To make the apple puree, just peel the apples, roughly chop and boil covered in water until soft.
Reserve the liquid and serve to your toddler as apple juice and mash the apples for a smoother consistency.
