Rice Bubble Slice.  A yummy, snappy, crackly, poppy rice bubble slice that is so easy the kid’s could make it for themselves!  You can literally put whatever you have on hand in….. dried fruits, nuts, seeds, chocolate chips…….  This one is nut free so perfect for their lunchbox .

Snappy, Crackly & Poppy Rice Bubble Slice

Here is a slice to use up all the Rice Bubbles I bought for the kids as a treat for breakfast, yet spend more time cleaning up Rice Bubbles than them eating them………….

You probably don’t need a recipe to make something every kid has eaten at some point, but here is a little inspiration….. its easy, its quick and you can throw in anything you like!

Description

Rice Bubble Slice.  A yummy, snappy, crackly, poppy rice bubble slice that is so easy the kid’s could make it for themselves!  You can literally put whatever you have on hand in….. dried fruits, nuts, seeds, chocolate chips…….  This one is nut free so perfect for their lunchbox.


Ingredients

Scale
  • 3 cups Rice Bubbles
  • 1/2 cup dried apricots
  • 1/2 cup desiccated coconut
  • 3 tablespoons Goji berries
  • 3 tablespoons sultanas
  • 2 tablespoons sunflower seeds
  • 2 tablespoons cacao nibs
  • 2 tablespoons chia seeds
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

In a large bowl combine all the dry ingredients.

In a small saucepan over med-high heat melt the coconut oil and then combine with the maple syrup and vanilla.  Pour over the dry ingredients and mix to combine well.

Spread evenly onto a lined baking tray (aprox 24cm x 24cm), cover with plastic wrap and put in the fridge to set.

Once hard cut into squares and enjoy!  Store in the fridge.
