Description
This Sesame Chicken recipe is sweet, salty and crispy, made with honey, cashews and steamed rice. A really quick and full of flavour family friendly dinner that everyone will love. Make the kids first then stir through the chilli for the adult’s serves.
Ingredients
CHICKEN
- 500g chicken thigh or breast, sliced thinly
- 1 tablespoon cornflour
- pinch white pepper
CASHEWS
- ½ cup raw cashews
- 1 tablespoon honey
- 1 tablespoon extra virgin olive oil
- ½ teaspoon turmeric
- ½ teaspoon salt
SAUCE
- ½ cup tamari or soy sauce
- ¼ cup honey
- 2 tablespoons sesame seeds
- 2 tablespoons tomato sauce (ketchup)
- 1 tablespoon fish sauce
- 2 teaspoons chilli achar or sambal oelek (optional)
TO COOK
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, finely diced
- 2cm piece ginger, finely diced
- 1 large red capsicum, cut into strips
- Thai basil or coriander to serve
- Steamed rice to serve
Instructions
CHICKEN
Thinly slice the chicken thighs, place in a bowl and coat in the cornflour and pepper.
CASHEWS
Combine all the cashews ingredients, then toast in a frypan over medium heat for 3-4 minutes, watching closely. Once caramelised, remove and spread out onto baking paper to cool. Then roughly chop and set aside.
SAUCE
Combine sauce ingredients and mix well.
TO COOK
Heat the oil in a large fry pan over medium heat, add the chicken and cook til crispy. Add the garlic and ginger, cook a further 2-3 minutes then pour in the sauce and capsicum, bring to the boil then cook medium-high heat for 5 minutes until sauce coats the chicken.
Serve over steamed rice and garnished with fresh Thai basil or coriander.
Notes
If adding the chill later, you can cook and serve those not having chilli, then stir through the chilli achar or sambal oelek as you serve those wanting the spice.
