This Roast Lamb Shoulder will be the juiciest and most incredible lamb roast your family will ever taste! With rosemary and garlic infused into the flavour.
Slow cooked lamb shoulder is cooked so it is ‘fall off the bone’ tender. Lamb shoulder has more flavour, is tastier and often cheaper, than the usual roast leg of lamb.
Ingredients
- 1.1kg lamb shoulder, bone in
- 2 tablespoons olive oil
- 1 garlic bulb, cut in half
- 3 rosemary sprigs
Instructions
Night before: Trim the lamb of any excess fat, salt generously and leave in fridge overnight.
Next day: Preheat oven to 160C.
Rub the lamb with the oil and place into baking tray with the garlic and rosemary. Add 250ml / 1 cup of water, cover with foil and roast for 2 hours.
Uncover the lamb, increase oven to 220C and roast for another 20 minutes until brown. The meat should be tender and falling off the bone.
