- 280g jar of sun-dried tomatoes
- 80g pine nuts
- 1 clove garlic
Instructions
Toast pine nuts on a dry pan for a few minutes – be sure to keep an eye on them as they can burn quite quickly.
Add all ingredients to a blender and blitz until combined.
Add a couple tablespoons of water if needed to create your preferred consistency.
Notes
- Toasted pine nuts can be replaced with toasted cashew nut for a milder flavour.
