One Tray Sausage + Potato Bake.  This is taking Bangers and Mash to another level.  All cooked on one large tray and loaded with veggies.

One Tray Sausage + Potato Bake

Geez I love one tray dinners, frees up so much time to do other fun things like the dishes or putting on a load of laundry……  This one is super easy, fun and you can throw on whatever your kid’s favourite veggies are.  Sam has decided his favourite dinner is hotdogs, so I thought I would mix it up a bit.  I am loving the radishes at the moment, however the kids didn’t touch them, but there were plenty of foods they do like on this tray so it didn’t matter.  You can just plonk this in the centre of the table and let everyone help themselves.

One Tray Sausage + Potato Bake

Description

Sausage + Potato Bake, taking Bangers and Mash to another level.  Cooked all on one large tray and loaded with veggies.


Ingredients

Scale
  • 4 large white potatoes
  • 1 large sweet potato
  • 8 beef or pork chippolatas
  • 2 tablespoons olive oil
  • 400g cherry tomatoes
  • salt & pepper
  • 1 avocado
  • 2 cups mixed green leaves eg rocket, baby spinach
  • 1 bunch radishes
  • 1/2 cucumber
  • 1/2 loaf sourdough
  • tomato sauce (optional)

Instructions

Pre heat oven to 200°C. (fan forced) Place baking tray in oven.

Cut potato into 1cm pieces and sweet potato into larger 4cm pieces, place onto hot baking tray with the sausages, drizzle with oil and bake in the oven for 30 minutes.  After 15 minutes give everything a bit of a toss and rotate the tray if needed.

Add half the tomatoes, season with salt and pepper and bake a further 5-10 minutes until tomatoes start to wilt.

Remove from oven and add remaining tomatoes, avocado, greens, radishes and cucumber and place in the centre of the table.  Serve with crusty sourdough and tomato sauce.
