Description
Muesli Bar Slice recipe perfect for school lunchboxes. Made with the goodness of oats, coconut, sunflower seeds and flaxseed meal, a sweet treat that will keep them full all morning
Ingredients
- 1 cup oats
- 1 cup desiccated coconut
- 1 cup plain flour
- 2/3 cup brown sugar
- 1/2 cup sultanas
- 1/2 cup sunflower seeds
- 1 tablespoon flaxseed meal
- 125g butter
- 2 tablespoons golden syrup
- 2 tablespoons water
- 1 teaspoon bi carb soda
Instructions
Pre heat oven to 180°C (fan forced). Line a 27cm x 18cm slice tray with baking paper.
In a large bowl combine oats, coconut, flour, sugar, sultanas, seeds and flaxseed meal.
Melt the butter and golden syrup in a saucepan over medium heat, once the butter has melted add the water and bi carb soda, quickly whisk together as it froths up and take off the heat. Pour into bowl with dry ingredients and mix well.
Pour into a baking tray and bake for 10-15 mins. Allow to cool in the tray before cutting.
Notes
This freezes well, just cut into pieces first, for easy to grab lunchbox fillers.
