Mongolian Beef Stir Fry Recipe

After much research, I am still unsure why this is called Mongolian Beef, but it basically means thin slices of beef, marinated and served with vegetables, usually spring onions, with a savoury brown sauce and steamed rice.  Not that it matters, I am just on a run of making beef and broccoli for dinner, this was just a super, flavourful beef and broccoli.  Also a quick meal to get on the table, once the meat has marinated its all ready in less time than it takes to cook the rice.

This easy Mongolian Beef is marinated in a simple marinade of; soy sauce, brown sugar, white pepper, sesame oil and salt. Then stir fried with garlic, ginger, spring onion and broccolini, or you could use any greens of your choice. Serve simply with steamed rice or just as it is.

Description

Mongolian Beef Stir Fry Recipe.

Ingredients

Scale
  • 300g beef tenderloin, sliced thinly
  • 2 tablespoons rice bran oil

MARINADE

  • 1 teaspoon cornflour
  • 1 teaspoon soy sauce
  • 1 teaspoon olive oil
  • 1 tablespoon water

SAUCE

  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • ½ teaspoon white pepper
  • ¼ teaspoon sesame oil
  • ¼ teaspoon salt

STIR FRY

  • 2 cloves garlic, finely diced
  • 2cm piece ginger, finely diced
  • 1 bunch spring onion, cut into 2cm pieces
  • 2 bunches broccolini, cut into 2cm pieces
  • steamed rice to serve

Instructions

Combine the marinade ingredients and pour over sliced beef to marinate for 30 minutes.

Heat up a wok or large frypan with 1 tablespoon of oil and stir fry the beef until half cooked.  Best done in 2-3 batches, then set aside.

Heat up the remaining 1 tablespoon of oil and stir fry the garlic and ginger for 1-2 minutes until aromatic.  Add the beef back into the wok and then the sauce.  Toss the beef through the sauce then add the spring onions and broccolini.  Stir fry for another couple of minutes tossing to mix well.

Serve over steamed rice.

Notes

For a cheaper version, use rump or flank steak.

You can use any cooking oil in replace of rice bran oil.

I like my veggies really crunchy, but feel free to cook them through a bit longer at the end, until how you like them.
