Miso Garlic Butter Soba Noodles
I love a super simple backup dinner for when I have had a big lunch and aren’t hungry for dinner and just want to feed the kids early to get the night time routine underway. This meal will literally only take minutes and has some nutritional value with the butter, garlic and miso. These soba noodles are made from buckwheat so perfect for those avoiding gluten. Ingredients
- 280g soba noodles
- 80g unsalted butter
- 2 cloves garlic, finely chopped
- 11/2 tablespoons white miso paste
- parsley to garnish
- sesame seeds to garnish
Instructions
Cook noodles as per packet instructions, removing from boiling water about a minute early. Reserve some of this cooking water.
Heat a large frypan over med-high heat, once hot add the butter and garlic. Cook for 1 minute stirring constantly.
Remove pan from heat and stir through miso paste and a splash of the cooking water. Add the noodles and toss well to combine.
Serve garnished with parsley and sesame seeds
