Make Your Own Self Raising Flour
This is such a handy recipe for if you run out of self raising but still have plenty of plain flour in your pantry. Or, as I do, have a huge amount of baking powder and so just make your own self raising flour rather than buying and storing two flours. I have recently moved to spelt flour over plain wheat flour. It isn’t gluten free but has a different gluten profile to wheat and is more easily digestible. Spelt is an ancient grain with higher levels of nutrients compared to plain wheat flour.
I have seen recipes that say 11/2 teaspoons of baking powder per cup of plain flour, but I found 2 teaspoons worked best for me. You can also add 1/2 teaspoon of bicarbonate soda if you are cooking with yoghurt, buttermilk or cocoa as these ingredients can require it.

Notes
Make sure you use fresh baking powder as it does have an expiry date and will affect the rise of your baking.
