Description
Mac and Cheese Recipe with Corn & Cauliflower Sauce. Creamy Macaroni and Cheese baked in the oven, with added cauliflower cheese sauce and corn and topped with crunchy breadcrumbs. All ready and on the table in less than 30 minutes!
Ingredients
- 250g macaroni pasta
- salted water
- ½ head cauliflower, cut into 1cm pieces
- 1¼ cups / 310ml milk
- 1 cup / 250ml single (pouring) cream
- ¾ cup corn kernels, frozen is fine
- 3 cups / 360g cheddar cheese, grated
- 1 cup / 130g parmesan cheese, finely grated
- salt & pepper
- 2 cups panko breadcrumbs
- 50g butter, roughly chopped
Instructions
Preheat oven to 200C.
Cook the pasta in a large saucepan of salted boiling water for 8 minutes. Add the cauliflower and cook another 2 minutes.
Place the pasta and cauliflower into a large casserole dish and mix in the milk, cream, corn, cheeses, salt and pepper. Stir well to combine.
Top with breadcrumbs and roughly chopped butter dotted around the top. Bake for 15-20 minutes or until golden and crunchy.
Notes
I like to add a heaped tablespoon of salt to my pasta water to cook.
