Description
A rich, moist cake made with honey, lemon, olive oil and yoghurt, baked into a slice making for easy lunchbox portions.
Ingredients

- 2 eggs
- 3/4 cup / 140g light extra virgin olive oil
- 1 cup vanilla yoghurt
- 2 tablespoons lemon juice
- 1/2 / 180g cup honey
- 1/2 cup / 110g raw caster sugar
- 1 cup desiccated coconut
- 13/4 cups / 225g plain flour
- 3 teaspoons baking powder
Instructions
Preheat oven to 150°C. Line a 27cm x 18cm slice tray with baking paper.
In a large bowl add the eggs, oil, yoghurt, lemon juice, sugar, honey and whisk together. Add the coconut, flour, baking powder and continue to whisk until all combined.
Pour into slice tray and bake for 30-35 minutes, or until a skewer comes out clean. Allow to cool in the tray for 10 minutes then on a wire rack.
Notes
Slice into serves and freeze in portions ready for school lunchboxes.
