Lemon Coconut Slice. A creamy, sugar free, dairy free, raw dessert that your kids will love! No baking required and can be eaten straight from the freezer as a quick and easy sweet snack to have on hand without the guilt!

No Bake Lemon Coconut Slice

Creamy, lemony and guilt free……
This won’t last long in your house either!

No Bake slice recipes are quick, easy and perfect for anyone to make, even you aren’t good at baking.  This is like a healthy version of the4 classic lemon slice, with the same zingy sweetness.

This Lemon Slice is great because;

 – No Bake – just blend and layer the ingredients, no oven required.

 – Delicious Flavour Combination – sweet, creamy and tangy flavours.

 – Healthy Slice – Gluten Free, Dairy Free and Refined Sugar Free.

 – Freezer Friendly – make a big batch and freeze, you can eat this slice straight from the freezer.

 

Ingredients for this Gluten Free Slice;

 – Cashews – I prefer to use raw cashews and to make this even healthier, you could soak them overnight before hand.  These can also be replaced with almonds.

 – Desiccated Coconut – use organic where possible.

 – Medjool Dates – this recipe requires Medjool Dates for their juicieness, other dates won’t work.

 – Lemon Juice – you could replace with lime or even orange.

 – Pinch of Salt – this can be omitted if you like, it is there to add to the flavour.

 – Coconut Oil – this will set hard and help hold the slice together.  Coconut oil does melt easily at room temperature, so this slice is best eaten straight from the fridge or even freezer.

 – Maple Syrup – I prefer to use maple syrup, but you could replace with honey or rice malt syrup.

 – Vanilla Extract – this is added for flavour, so can be left out if you prefer.

Ingredients

BASE:

  • 1 cup cashews
  • 1 cup of desiccated coconut
  • 1 cup Medjool dates, pitted
  • 1 tbsp lemon juice
  • pinch of salt

TOP:

  • 1/2 cup cashews
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 tbsp lemon rind, finely grated
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract

Instructions

THERMOMIX METHOD

Line a baking tray with baking paper. 

Place all base ingredients into mixing bowl and blend 20 sec / speed 8.  The mixture should stick together like a dough, if not, add a tablespoon of water and blend a further 10 sec / speed 8.  Transfer the mixture to the lined tray and press down evenly to form a base, place in the freezer to set. 

Wash and dry the mixing bowl, add all of the icing ingredients and blend 1 min / speed 8, until smooth and creamy.  Remove tray from freezer and pour over icing, set in the fridge or freezer. 

Once the icing is firm, cut into squares and store in the fridge or freezer.

NON THERMOMIX METHOD

Line a baking tray with baking paper. 

Place all base ingredients into a food processor and blend until well combined into a dough, add a tablespoon of water if it doesn’t stick together.  This can take 4-5 minutes in a small food processor.  

Transfer the mixture to the lined tray and press down evenly to form a base, place in the freezer to set. 

Wash and dry the food processor, add all of the icing ingredients and blend until smooth and creamy.  Remove tray from freezer and pour over icing, set in the fridge or freezer. 

Once the icing is firm, cut into squares and store in the fridge or freezer.

Notes

This slice is best stored in the freezer as can become quite soft once it gets to room temperature.
