Lemon Cheesecake Balls


Description

4 ingredient no bake bliss balls made with cream cheese, coconut, lemon and honey.


Ingredients

Scale
  • 2 cups / 200g desiccated coconut
  • 250g cream cheese, roughly chopped
  • 1 lemon, zested and juiced
  • 12 tablespoons honey
  • extra coconut for rolling

Instructions

THERMOMIX METHOD

Place all ingredients into TM bowl and blend 20 sec / speed 8.  Scrape down sides and repeat until well combined.  Use wet hands to roll into tablespoon sized balls.  Sprinkle extra coconut on a plate and roll each ball in to coat, then place on a tray in the fridge to set.

NON THERMOMIX METHOD

Place all ingredients into a food processor and blitz until well combined.  Use wet hands to roll into tablespoon sized balls.  Sprinkle extra coconut on a plate and roll each ball in to coat, then place on a tray in the fridge to set.

Notes

You can store these in the freezer and allow to defrost in the lunchbox.
