Has Taco Tuesday left you with leftovers?  These Leftover Tacos Quesadillas are the perfect solution!  Chuck them in the lunchboxes or have them for dinner.  You can have dinner on the table in less than 10 minutes!

Leftover Tacos Quesadillas

My kids love quesadillas in their lunch boxes, I don’t even try and keep them warm.  Sam prefers just plain cheese, but I thought these would be a great way to use up leftovers from taco night and it makes for a super easy, (but substantial) dinner.  Great maybe for Fridays, at the end of the week when everyone is too tired to cook and sit down for a big dinner.

Leftover Tacos Quesadillas


  • Yield: 6-8 servings 1x

Description

Crispy golden quesadillas made using leftover tacos ingredients.


Ingredients

Scale
  • 6 tortillas
  • 1–2 cups cooked taco mince (whatever you have left)
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 3 cups mozzarella cheese, grated

Instructions

Sprinkle one half of each tortilla with a bit of cheese, top with mince, tomato and avocado. Top with more cheese and fold in half.
Place frypan over medium-high, add a quesadilla, press down lightly and cook for 2 minutes on each side until golden brown and crispy.
Cut in half and serve.

Notes

Mozzarella cheese works best for melting, but if you only have cheddar in the fridge that will be fine too.
