Home Made Tomato Pasta Sauce
This tomato pasta sauce is great for using in spaghetti bolognaise, topping on pizzas or even as a really quick midweek dinner simply stirred through pasta and topped with cheese. I portion mine into zip lock bags and freeze for up to 3 months.
Summer is the best time to make this as tomatoes are in season and at their tastiest, although this year we had a late harvest of tomatoes and it was well into Autumn when we were still picking them. Stock up your freezer and you will have plenty well into Winter.
You can use any type of tomato for this recipe, I like using cherry tomatoes as they are slightly sweeter, but anything picked locally will taste amazing. Same with the added veggies, you could really add almost anything you liked eg capsicum, chillis, eggplant, zucchini or mushrooms.
The longer the sauce is cooked the thicker the consistency and fuller the flavour. I have suggested an hour, but you could cook up to 90 minutes, just keep an eye on it to make sure the bottom doesn’t start to burn.

Ingredients
- 1kg tomatoes
- 2 garlic cloves
- 1/2 brown onion
- 1 carrot
- 1 stick celery
- 40g olive oil
- 4 tbsp tomato paste
- 1 tsp dried thyme
- salt and pepper
Instructions
THERMOMIX METHOD
Place all ingredients into mixing bowl and blend 30 sec / speed 10. Scrape down sides of bowl.
Add 1/2 cup of water and cook 30 min / Varoma / speed 1 with MC removed and TM basket on mixing bowl lid.
Check the consistency of your sauce and for a thicker sauce cook a further 30 min / Varoma / speed 1 with MC removed and TM basket on mixing bowl lid. If you choose to cook this extra 30 mins just regularly check your sauce to make sure the base isn’t burning. (the juiciness of your tomatoes will affect how thick your sauce gets)
NON THERMOMIX METHOD
Use a food processor to blitz all the ingredients, you may need to do in batches.
Place into a large pot on the stove with 1/2 cup of water and simmer gently with a lid on for up to 90 mins, stirring every 10 mins or so and checking consistency.
Notes
Store sauce in a sealed container in the fridge – it’ll keep for up to a week. Portion and freeze the rest for up to 3 months.
