Homemade Healthy Sausage Rolls with Beef & Vegetables, healthier than store bought and packed with veggies. I had planned on calling these Hidden Veggie Sausage Rolls, until I gave them to my kids and I got “I don’t like the carrot in them” Not so hidden veggies sausage rolls. Side note, after a passionate discussion with Georgia, she tried them and loved them. But feel free to leave the carrot out…..
STEP 1
Sauté the finely diced vegetables for 2 minutes then add the bacon.
STEP 2
Combine all cooled ingredients, lay onto pastry & brush with egg.
STEP 3
Roll with seal on the bottom, brush again with egg and chill in fridge.
STEP 4
Cut into pieces and bake for 30-35 minutes at 180°C.
Healthy Sausage Rolls
The added veggies to these sausage rolls give them a hint of sweetness and the bacon makes them salty, juicy and super moorish. You could try mincing the vegetables to make them really hidden, or leave out the carrot as it seems to stand out the most. This recipe would still work without the diced carrot.
Adding celery and carrot to sausage rolls works well without making the pastry too soggy, like other vegetables such as zucchini.These can look undercooked when they come out, but it’s just the pink from the bacon.

THE EASIEST HOMEMADE SAUSAGE ROLLS EVER!
SAUSAGE ROLLS
If you want to prepare these ahead of time, it’s best to assemble and freeze before baking. Place into freezer in an airtight container with layers of baking paper in between each single layer of rolls. Then bake from frozen for 40 minutes, brushing with egg before placing in the oven.
To help keep these sausage rolls healthy I have used Crunch Preserves hand made tomato sauce which has less sugar than tomato sauce from the supermarket.

Description
Homemade Healthy Sausage Rolls with Beef & Vegetables, healthier than store bought and packed with veggies.
Ingredients
- ½ tablespoon extra virgin olive oil
- 2 cloves garlic, finely diced
- 1 onion, finely diced
- 1 celery stalk, finely diced
- 1 medium carrot, finely diced
- 150g bacon, finely diced
- 500g mince, beef or pork
- ¾ cup / 40g panko breadcrumbs
- salt & pepper to season
- 1 egg, lightly whisked
- 2½ sheets puff pastry
- Crunch Preserves Gourmet Tomato Sauce to serve
Instructions
Add the oil to a large frypan over medium-high heat and sauté the garlic, onion, celery & carrot for 2 minutes. Add the bacon and cook a further 2 minutes, stirring. Pour into a large bowl and set aside to cool slightly for 10 minutes.
Stir in the mince, breadcrumbs, salt and pepper until well combined (I found it easier to use my hands for this).
Lay out a sheet of pastry and cut in half. Take one half, brush egg along the long side. Get ⅕ of the mixture and shape it down the middle of the pastry, pressing meat down slightly. Roll up and finish with the seam at the bottom. Repeat with remaining sheets of pastry and place in the fridge for an hour. (this will make it easier to cut)
Preheat oven to 180°C.
Cut each roll into 5 pieces and brush with egg. Place onto baking trays lined with baking paper and bake for 30-35 minutes. Rotate the trays as they cook so they all brown evenly.
Cool slightly on trays then serve with tomato sauce.
Notes
Panko breadcrumbs gives a lighter filling, if you are using regular breadcrumbs just use ½ cup.
You can grate the vegetables if you like and even leave out the carrot altogether.
