After this weekend we will officially be a camping family. We are picking up our newly bought camper trailer and going straight out on a test run. These are my new life goals…. camping and relaxing.
I even attempted to give up coffee and wine and just work on getting a good night’s sleep. For a while there I was super organised, pre made the kid’s lunches for a whole week, went to bed early and was even on top of the washing! Anyway, it was a good week ha ha back to wine and coffee… still hoping to keep up the relaxing though. I found being organised with lunches really helps out my week. I will be posting some of my newly discovered tricks on this, including turning a whole loaf of bread into Vegemite sandwiches, cutting, putting back into bread bag and freezing, ready to grab a sandwich whenever is needed! Amazing!
Other tricks to super organised lunchboxes are recipes that are easy and not time consuming. I find baking time consuming and so love a great no bake slice (if you can’t already tell!). Here is a chocolatey but also healthy slice that is perfect for lunchboxes. Cut it up, store in the freezer and grab bars whenever you need.
I would have assumed these would be gluten free as they use rice puffs as the base, however on reading the packet I bought it says may contain gluten. I guess if you can source puffed rice from a supplier that doesn’t also supply gluten products you may remove that risk of them containing gluten. You can purchase some online from Our Organics that are gluten free here.
There is no baking required for these bars, so can easily be mixed together and plonked in the fridge on a Sunday night, ready for a week of school lunchboxes.
Healthy Chocolate Rice Krispies Bars

Description
Ingredients
- 4 cups / 120g puffed rice
- 2 cups / 200g desiccated coconut
- 1/4 cup / 25g raw cacao powder
- 2 tablespoons chia seeds
- 2 tablespoons cacao nibs
- 1 cup / 300g rice malt syrup
- 1/2 cup / 110g coconut oil
Instructions
In a large bowl mix together the puffed rice, coconut, cacao powder, chia seeds and cacao nibs.
In a small saucepan over low heat combine the rice malt syrup and coconut oil. Pour over the dry ingredients and stir well to combine.
Spread evenly into a square cake tin, cover and set in the fridge for at least 2 hours.
Cut into bars and serve.
Notes
Once cut, these bars can be stored in the fridge or freezer.
