Description
Savoury Muffins that are loaded with flavour, ham, cheese, spinach and tomato relish.
Ingredients
Scale
- 2½ cups / 375g self raising flour
- ½ cup Crunch Tomato Relish
- 2 handfuls / 300g ham, thinly sliced
- 1 handful baby spinach leaves, thinly sliced
- 2 eggs
- 1½ cup cheddar cheese, grated
- 1 cup / 250ml milk
- ½ cup / 125ml extra virgin olive oil
- salt & pepper
Instructions
Pre heat oven to 180°C.
Place all ingredients in to a large bowl and stir until just combined. Don’t overwork the mixture.
Spoon into a 12 hole muffin tin lined with paper cases (or squares cut from baking paper). Bake for 25 minutes or until a skewer comes out clean when inserted.
Cool on a wire rack. Serve with extra tomato relish.
Notes
These will keep for 3 days in an airtight container in the fridge, or freeze for longer.
